Choosing a good pairing of food with a right glass of wine is like to be a couplematcher.
It is like a perfect combinations among different balances to achieve an harmonious relationship moment. The wine has to be able to clean the palate from the food without overpowering or underpowered.

In Italian Sommelier Association ( AIS) have this chapter to choose Food&Wine :
Sweet food = equal= sweet wine
Sapidity food = opposed = dry, Sapid,wine
